This is one of our favorite ways to savor spring, enjoy a healthy salads and save money. Just go to the farmer's market and gather your favorite spring produce, use purple cauliflower if you can find it.

  • Servings: ! cup
  • Yield: 4 servings
  • Prep Time: 20 min

Ingredients

  • 4 cups of your favorite chopped salad, lettuce, tomatoes, onion, bacon, corn, etc.
  • ¼ c. vegetable or peanut oil
  • ¼ c. sugar
  • ¼ c. olive oil
  • ¼ c. red wine vinegar
  • the juice of 1 lime, fresh
  • 1 garlic clove smashed and chopped
  • 1 spoonful salt
  • 1 spoonful onion, chopped
  • 1 spoonful onion powder
  • a sprinkle of paprika
  • a sprinkle of hot red pepper

Preparation

  1. Make your favorite chopped salad and place in large bowl.
  2. In a small bowl combine the rest of the ingredients and stir vigorously.
  3. Right before serving, pour around sides of salad and toss.
