It's one of the family's favorite recipes! I cook this again and again. You can try with boiled egg instead of Daikon. I'm sure you want more rice!!!

TERIYAKI Chiciken Drumstick and Daikon Radish

  • Yield: 2 servings
  • Cooking Time: 1 hr

Ingredients

  • ⅓ DAIKON radish (about 150g)
  • 8 Chicken Drumstick (about 500g)
  • 3 cup water
  • 3 tbsp soy sauce
  • 2 tbsp sugar
  • 2 tbsp MIRIN (sweet SAKE)
  • 1 inch piece of ginger roots

Preparation

  1. Peel and cut DAIKON in round slices or if it's big, Cut it in half moon. Put the DAIKON and add just enough water to cover it in a large pot. Bring it to the boil.
  2. When Daikon cooked, Add Chicken lightly in boiling water, then Drain water.
  3. Place 3 cups of water, soy sauce, sugar, MIRIN, Chicken, Daikon and sliced ginger in the pot. Bring it to the boil and reduce heat to medium low and let simmer for 20 to 30 minutes or until chicken is cooked and sauce has thickened.
  4. It tastes even better in the next day!!!
