A fun healthy meal for food lovers of all ages

Ribbon Salad with Sesame Chicken

  • Yield: 4 servings

Ingredients

  • 4 mini cucumbers
  • 4 carrots
  • 1 mango
  • 1 store bought roasted chicken
  • 1 T Sesame seeds plus more for garnish
  • 1 T Sesame oil
  • Olive oil
  • Rice Wine vinegar
  • ½ C Orange Juice
  • 1t Grated Fresh Ginger
  • 2 Scallions cut into strips

Preparation

  1. Using a vegetable peeler, shave cucumbers and carrots into a salad bowl
  2. Cut mango into thin strips and add to the bowl of veggies
  3. Make the dressing by mixing the remaining ingredients except the chicken
  4. Slice the breast and cut the dark meat from the bone
  5. Toss veggies with dressing and top with roasted chicken
  6. Sprinkle with sesame seeds and serve
