Mint -Chocolate Chips Rice Pudding

Prep Time: 10 min Cooking Time: 30 min

Ingredients

  • 1 cup long grain brown rice, cooked
  • 3 Tbsp. mint, finely chopped
  • 4 cups 2% milk
  • 2 Tbsp. Honey
  • 2 Tbsp. coco powder
  • 1 Tbsp. corn starch
  • 2Tbsp. dark mint chocolate, chopped

Preparation

  1. Cook brown rice as instructed on package
  2. To the cooked rice add 3 ½ cups of milk and let it come to a boil stirring occasionally
  3. In a small bowl mix 1 Tbsp. of corn starch with a ½ cup of milk, mix well; add to the rice mixture
  4. Stir in honey, coco powder and mint
  5. Let mixture thicken up about 15 minutes
  6. Add chopped chocolate on top
