Lemon Lavender Waffle Cookies

A classic combination of Lemon and Lavender combine in a delicate cookie with a crisp outside and soft middle. They scream "Spring is Here!" and the best part is you don't even have to turn on the oven!

Lemon Lavender Waffle Cookies

  • Servings: 1 cookie
  • Yield: 24
  • Prep Time: 1 hr

Ingredients

  • 2 cups flour
  • ¾ cups sugar
  • ¼ teaspoon baking powder
  • 2 teaspoons dried lavender
  • 1 teaspoon lemon zest
  • pinch of salt
  • 14 tablespoons butter, melted and cooled
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • juice of 1 small lemon
  • water if needed to make the glaze

Preparation

  1. In a large bowl, combine the flour, sugar, baking powder, lavender, lemon zest and salt.
  2. Add the eggs, one at a time
  3. Pour melted, cooled butter into crumbly flour/egg mixture. Add vanilla.
  4. Stir carefully to combine completely.
  5. Cover and refrigerate for 1 hour.
  6. Heat waffle iron to medium high heat
  7. Place a small scoop of batter into each section of the waffle iron.
  8. Close lid and bake in waffle iron for 3-4 minutes or until golden brown.
  9. Remove to cooling rack and let cool slightly.
  10. Repeat until all batter is used.
  11. Meanwhile, make the glaze.
  12. Combine 2 cups powdered sugar and the juice of a small lemon (and water if needed to make a thin glaze)
  13. Spoon glaze over each cookie and let the glaze dry.

Recipe Tags

These cookies will be soft when they first come off the waffle iron but will crisp some as they cool.
