Raspberry Chocolate Mousse

Total Ingredients:

1 cup dark chocolate

1 3/4 cups heavy cream, divided

1 tsp Vanilla paste

1/4 tsp kosher salt

1 cup raspberries

1/4 cup sugar

2 Tbsp. Water

1 orange, zested

Vanilla ice cream

Chopped chocolate chip cookies

4 - 4oz mason jars


Chocolate Mousse:

Ingredients:

1 cup dark chocolate

1 3/4 cups heavy cream, divided

1 tsp Vanilla paste

1/4 tsp kosher salt


Chocolate Mousse Method:

Heat 1 cup of cream to a boil.

Remove from heat and pour over chocolate.

Whisk in Vanilla.

Stir until smooth.

Completely cool mixture.

Whip remaining cream to stiff peaks.

Fold into chocolate mixture and chill.

The mixture is now ready to pipe.


Raspberry Sauce:

Ingredients:

1 cup raspberries

1/4 cup sugar

2 Tbsp. Water

1 orange, zested


Method:

Mix all ingredients and bring to a simmer in medium sauce pan.

Cook for 6-8 minutes until a little thick.

Remove from heat and transfer to a blender.

Blend until smooth.

Strain through a fine mesh sieve and chill.


To assemble you will need:

Vanilla ice cream and chopped chocolate chip cookies


To assemble:

Pipe 1.5 oz. of chocolate mousse on the bottom of a 4 Oz mason jar.

Scoop 2 Tbsp. Vanilla ice cream on top.

Spoon 1 Tbsp. Raspberry syrup on top of ice cream.

Top with 1.5 ounces more of the chocolate mousse and the chocolate chip cookie pieces.

Freeze to hold.

Take from freezer 10 minutes before serving.
