This is a creation Kelly and I made years ago, a "wow" once it hits the palate! A little spicy with a sweet and cool factor.

Ingredients

  • thawed deviened shrimp/tails removed
  • chili spice rub
  • won ton sheets
  • seasoning salt
  • pre-made guacamole
  • sour cream
  • roasted corn

Preparation

  1. toss shrimp with olive oil and chili seasoning
  2. bake at 400 for 8 minutes
  3. cool shrimp
  4. to make won ton cups, cut sheets into small circles to fit mini muffin pan (coated with olive oil spray), press into muffin tins and sprinkle with seasoning salt
  5. bake won tons for 8 or so minutes (until light golden color and crisp) at 350
  6. cool won tons
  7. mix guacamole with roasted corn and sour cream; place in zip lock bag
  8. cut corner of zip lock bag and pipe into won ton cups; place shrimp on top (tail down)
  9. place on bed of arugula for presentation
