This healthy brunch/lunch option is a great choice when your leftovers would perfectly adorn a dollop of plain greek yogurt.
Yogurt "What's in the Fridge" Bowl
- Yield: 1 serving
- Prep Time: 5 min
- 1 cup Plain Greek Yogurt
- ¾ cup Roasted Brussel Sprouts (halves)
- 1-2 oz Roasted Salmon
- ¼ cup Pomegranate, Goat Cheese Couscous
- ⅛ cup Chopped Almonds
- In a bowl, combine all ingredients in the order listed
- Drizzle with honey and/or freshly cracked black pepper
This delicious yogurt bowl was made from the leftover of dinner the night before. I love using what I have to recreate sensational meal experiences.
