Pineapple chicken with broccoli

I think this recipe is quick and easy with some healthy ingredients. Get home late from work and in 30 minutes you can whip up a good hot meal. No fast food tonight...

Prep Time: 15 min

Cooking Time: 15 min


  • 1 lb. chicken tenders
  • 1 broccoli crown
  • 1/2 cup brown sugar
  • 1/2 cup pineapple chunks
  • 1/2 stick butter
  • 6 oz pineapple juice
  • 2 garlic cloves
  • Few green onions
  • Sesame seeds
  • 2 tbls flour
  • Roasted garlic quinoa
  • Soy sauce


  1. Brown cleaned chicken tenders with butter
  2. Add garlic
  3. Add Roux and pineapple juice
  4. Steam broccoli in a separate pot
  5. Add broccoli and pineapple to chicken
  6. Simmer until sauce thickens - about 10 minutes
  7. Pour over quinoa and top with sesame seeds and chopped green onion
