A simple healthy morning recipe

Philly Omelette and bacon

  • Cooking Time: 10 min


  • 2 eggs
  • 1 Vidalia Onion, rough chopped
  • 1 green pepper, rough chopped
  • ¼ cup Shredded Swiss
  • 2 uncured bacon
  • Olive Oil


  1. Place 2 strips of bacon on paper towel. Microwave 2 min 15 sec
  2. Drizzle olive oil to coat medium pan
  3. Saute onion until lightly carmelized on medium low
  4. Add green peppers. Cook until softened
  5. Meanwhile, break eggs into small bowl. Add cheese. mix until combined
  6. Add green pepper/ onion mix to eggs and cheese
  7. Return to pan and cook until eggs are cooked. Folding when eggs are solid around edge
  8. Season omelette with sea salt and pepper, if desired.
