Heart Healthy Sugar Cookies

  • Yield: 12 mediun size 24 mini


  • ½ cup old fashioed oats
  • ½ cup whole wheat flour
  • ½ cup all purpose flour
  • 2 Tbsp. olive oil
  • ½ cup sugar
  • 1 tsp. cornstarch
  • ½ tsp. baking powder
  • 1 tsp. vanilla extract
  • 1 tsp. pumpkin extract
  • ⅛ tsp. salt
  • 1 egg, at room temperature


  1. Pre-heat oven to 350
  2. In a large bowl mix oats, flours, cornstarch. baking powder, and salt, mix well
  3. In aother bowl mix egg, vanilla and pumpkin extract
  4. Add olive oil
  5. slowly add the sugar making sure it is dissolved
  6. mix the wet into the dry ingredients
  7. kneed dough with hands until the dough is all together
  8. Roll dough to ½ inch in thickness, cut out heart shaped cookies
