Cast Iron Chili

Cast-Iron chili is a family favorite since childhood. Made with Mc Cormick Chili O mix which is now original Chili mix. Finished with rich white cheddar and sour cream. Welcome home.

Cast Iron Chili

  • Yield: 6-8 servings
  • Prep Time: 30 min
  • Cooking Time: 1 hr


  • 2 Tablespoons extra virgin olive oil
  • 2 large yellow onions small diced (equal sizes)
  • 1 lb 80/20 hamburger seasoned well with sea salt and fresh cracked black pepper
  • 4 15-oz cans of chili beans (drained)
  • 2 15-oz can kidney beans ( not drained )
  • 3 8-oz cans tomato sauce
  • 3 cans water filled from empty tomato sauce cans. Because, this is how Grandmother did it.
  • 2 packets McCormick® Chili Seasoning Mix, Original. Please no substitutions
  • 2 cups white cheddar cheese
  • 1 16-oz container of sour cream


  1. Preheat large cast-iron pan to medium high
  2. Add olive oil
  3. Add onions and let it caramelize. Then, push aside
  4. Add hamburger and sear for 2 minutes. Then, turn and let it sear again before mixing it with onions.
  5. Scrape bottom of pan to remove flavor bits. This is your flavor.
  6. Put beans, tomato sauce, water, and chili packets slowly into a different large deep pan.
  7. Bring to a boil. Stir often.
  8. Reduce to simmer.
  9. Add cooked hamburger mixture.
  10. Simmer for one hour stirring often scrapping bottom of pan
  11. Serve hot in a chili bowl and top with cheddar cheese and a dollop of sour cream
  12. Serve with buttered saltine crackers and a glass of ice cold bubbly seltzer water

Keys to success.

1. The beginning process of this dish will determine a successful dish. The caramelization of the onions and searing the hamburger are key.

2. The brown bits that form from the caramelization is where all your flavor will be with any dish. Please save every morsel.

3. I recommend cast-iron for this dish. Inexpensive cookware that is perfect. I included a link to explore all the spectacular options available in cast-iron. It can be purchased at most stores. I paid no more than $22.00 for my 15" pan at Walmart.


4. Monitor chili. A drop of water may be needed along the way.

5. Stir from the bottom up as in 'to fold" this will maintain the integrity.

6. I recommend brand name ingredients for this dish.

7. This dish is even better the next day.

8. Slowly blend the Chili mix so it doesn't clump. McCormick® Chili Seasoning Mix, Original

8. Add salt and pepper to the dish per desired taste. Make sure seasoning occurs in the beginning stage of the dish added to the hamburger and season as you go. Always taste dish along the way.

Caramelization (British English: caramelisation) is the browning of sugar, a process used extensively in cooking for the resulting nutty flavor and brown color. As the process occurs, volatile chemicals are released, producing the characteristic caramel flavor.
