Avocado baked with black beans, a little shredded cheddar, chopped tomato and topped with egg.

Baked Mexican-Avocado with Egg

  • Servings: 1
  • Prep Time: 15 min
  • Cooking Time: 20 min


  • 1avocado, sliced in half
  • 2 eggs
  • 1 tablespoon low sodium black beans
  • 1tablespoon shredded cheese
  • 1tablespoon chopped tomatoes
  • Salsa ( optional)
  • Salt and pepper to taste


  1. Slice avocado, remove pit and scoop out a bit to make room for filling
  2. Fill with beans, cheese
  3. Carefully break egg into avocado
  4. Top with a little more cheese and chopped tomatoes
  5. Bake at 400 for 20 ( or to your desired egg doneness
  6. Serve with salsa
  7. Optional: enjoy with some multigrain toast
