Thanksgiving Eggs Benedict

Your family will look forward to Thanksgiving leftovers more then the actual day. This Benedict is our favorite way to use up leftover turkey, stuffing, and all the fixings.

Thanksgiving Eggs Benedict

  • Yield: 4 servings

Ingredients

  • 2 ½ C Leftover Stuffing
  • 3 eggs, beaten
  • Turkey Breast, sliced
  • 4 eggs, poached or fried
  • Gravy
  • Cranberry Sauce

Preparation

  1. Add beaten eggs to your stuffing and mix together to form patties.
  2. Sauté the stuffing cakes in Olive Oil until brown and cooked throughout both sides.
  3. Top cakes with 2 slices of turkey breast and a poached egg.
  4. Add a dollop of cranberry sauce and drizzle of gravy.
  5. Enjoy!
