These healthy toddler friendly veggie bites are an easy appetizer to create and great snacks for families on the go. These little bites are full of Vitamin A, C, Calcium, Iron and Fiber!

Green Protein Packed Bites

Prep Time: 15 min Cooking Time: 20 min

Ingredients

  • 2 de-stemmed stalks of kale
  • 1 cup of black beans
  • 1 cup of mozzarella
  • ½ cup Parmesan
  • ½ cup flaxseed meal (can substitute with cornmeal)
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 cups of fresh spinach

Preparation

  1. Pre-heat oven to 375 degrees
  2. Steam 2 large de-stemmed stalks of kale for 5 minutes
  3. Place all of the ingredients including stemmed kale into a food processor or mixer to combine all ingredients
  4. Scope tablespoon size mounds of mixture and form into a ball
  5. Place rolled bites onto a greased cookie sheet or parchment paper
  6. Bake for approximately 20 minutes, checking after 15 min

Recipe Tags

The bites will be soft when first removed from the oven and bottoms will be a nice golden brown. Allow to cool thoroughly to set up. Store in the refrigerator once completely cooled. Makes approximately 18-20 bites.
