Grandma's Whole Wheat Molasses Quick Bread

This is a 100% whole wheat, vegan quick bread that just takes 1 bowl to make. I remember devouring this bread smeared with apple butter at my grandmother's house as a child and now it's my kids' favorite quick bread, too!

Grandma's Whole Wheat Molasses Quick Bread

Prep Time: 10 min Cooking Time: 1 hr

Ingredients

  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups white whole wheat flour
  • 1 cup whole wheat pastry flour
  • ¼ cup Sucunat or coconut palm sugar
  • ½ cup molasses
  • 1 ½ cups non-dairy milk, such as unsweetened almond milk, plus 1 ½ teaspoons apple cider vinegar

Preparation

  1. Preheat the oven to 350 degrees. Lightly grease a standard loaf pan.
  2. Whisk together the first six ingredients.
  3. Add the molasses and milk and stir until just combined.
  4. Pour in the prepared loaf pan and bake for 1 hour.
