This is a 100% whole wheat, vegan quick bread that just takes 1 bowl to make. I remember devouring this bread smeared with apple butter at my grandmother's house as a child and now it's my kids' favorite quick bread, too!
Grandma's Whole Wheat Molasses Quick Bread

- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups white whole wheat flour
- 1 cup whole wheat pastry flour
- ¼ cup Sucunat or coconut palm sugar
- ½ cup molasses
- 1 ½ cups non-dairy milk, such as unsweetened almond milk, plus 1 ½ teaspoons apple cider vinegar
Preparation
- Preheat the oven to 350 degrees. Lightly grease a standard loaf pan.
- Whisk together the first six ingredients.
- Add the molasses and milk and stir until just combined.
- Pour in the prepared loaf pan and bake for 1 hour.
