A delicious fresh springy salad!

Strawberry Balsamic Salad

  • Yield: 4
  • Prep Time: 20 min

Ingredients

  • 2 teaspoons strawberry perserves
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons extra-virgin olive oil
  • 1 shallot, chopped
  • 1 teaspoon of honey
  • Salt and pepper, to taste
  • 1 pint strawberries, sliced
  • ⅓ cup pecans, pine nuts or walnuts (optional)
  • ⅓ cup or more of gorgonzola or blue cheese
  • 4 to 5 cups chopped spinach or mixed greens

Preparation

  1. Place perserves, honey and shallot in a medium bowl and whisk in vinegar then extra-virgin olive oil.
  2. Season the dressing with salt and pepper.
  3. Add the strawberries and greens to bowl and toss to coat evenly in dressing. Top with gorgonzola and nuts.
