Creme de Menthe Avocado Fudsicles

Swap the traditional, sugar-loaded summer fudgsicles with these healthy DIY treats made with avocado, cocoa powder, pure maple syrup, and coconut milk. These fudgsicles will please both kids and adults!

Creme de Menthe Avocado Fudsicles

  • Yield: 6-8 fudgsicles
  • Prep Time: 2 hr

Ingredients

  • 2 large hass avocados
  • ½ cup + 1 tablespoon coconut cream (the thick stuff at the top of the can)
  • 1 tablespoon + 1½ teaspoons pure maple syrup
  • 1 tablespoon cocoa powder
  • 1.5 oz dark chocolate (65% cocoa)
  • peppermint oil or peppermint extract

Preparation

  1. Scoop two large avocados into a food processor. Pulse for a few minutes until light and creamy.
  2. Reserve ½ cup of the avocado mixture and set aside.
  3. Add ½ cup coconut cream, 1 tablespoons pure maple syrup, cocoa powder, and 1.5 ounces of melted dark chocolate (65% cocoa or higher)
  4. Pulse again until all the ingredients are well combined.
  5. Add 1½ teaspoons of pure maple syrup, one tablespoon coconut cream, 2-3 drops of peppermint oil. I also added a finely chopped square of dark chocolate. Mix until well, until all the coconut cream is combined into the avocado.
  6. Next, scoop in 1½ tablespoons of the chocolate avocado mixture into the bottom of the popsicle molds. I used a knife to swirl it down to the bottom, in order to avoid air bubbles. If you want to be neat and tidy, using your finger or a damp paper towel, rub the inside of the popsicle mold out after you've finished with the top layer.
  7. Next, add a small (1 teaspoon or so) of the mint avocado cream to the mold. Then top with more chocolate avocado cream.
  8. Freeze at least 2 hours before serving.
  9. It may be hard to get the fudgsicles out of the molds but if you run the plastic under hot water for a few seconds, they will start to lift out easier.
