Bacon Jam

This delicious jam is so good you'll want it in your fridge every day. Add a burst of bacon flavor to eggs or toast. Great for topping a burger too.

Bacon Jam

Prep Time: 10 min Cooking Time: 1 hr

Ingredients

  • 1 lb smoked bacon cut into 1" pieces
  • 1 medium yellow onion diced
  • 1 shallot diced
  • 3 tablespoons brown sugar
  • 1 tablespoon butter
  • ¼ cup balsamic vinegar
  • 1 cup chicken stock
  • 2 teaspoon worcestershire sauce
  • salt & pepper to taste
  • ¼ Water

Preparation

  1. Cook bacon in a heavy bottom pan or Dutch oven until crispy, about 15 minutes, stirring occasionally
  2. Add the butter, onions and shallots to the pan
  3. Season with salt and pepper
  4. Continue cooking until onions begin to caramelize, about 10 minutes
  5. Add brown sugar, stir and continue cooking 5 minutes
  6. Add stock, deglaze pan
  7. Add balsamic vinegar and worcestershire sauce
  8. Simmer uncovered, stirring occasionally, until liquids reduce by half, about 20 minutes
  9. Remove from heat, place mixture in a blender
  10. Add water and pulse in blender to desired consistency
  11. Refrigerate in an air tight container for up to a month

Used as a condiment, bacon jam is great on burgers or sandwiches. It's also a flavor-packed side for deviled eggs or just on spread on a cracker.
