Old fashioned cream scones

Found in a heirloom antique 1950 cookbook. my family loves this old classic and asks for them all the time.

Old fashioned cream scones

  • Servings: 8 scones

Ingredients

  • 2 cups flour
  • 3 tablespoons baking powder
  • ¼ white sugar
  • ½ teaspoon salt
  • ⅓ cup butter
  • ⅓ cup heavy cream or high fat milk
  • 2 eggs reserve 1 tablespoon egg white for brushing
  • 2 tablespoons sugar
  • fresh chopped or whole fruit (strawberry, cherry, blueberry work well)

Preparation

  1. Mix flour, powder, ¼ cup sugar and salt well.
  2. crumble in butter with pastry cutter.
  3. beat eggs and add to heavy cream.
  4. pour eggs and cream into mix, -form dough.
  5. fold in fruit now.
  6. cut dough in half.
  7. form two 1 inch thick, 6 inch diameter flat circles aka disks with the dough
  8. cut each disk into quarters.
  9. brush each scone with reserved egg whites lightly.
  10. sprinkle remaining sugar on top.
  11. bake at 375 for 15-18 minutes.
  12. let cool for 1-2 minutes before serving or like 8-10 minutes if you are adding frosting.
