White Bean Turkey Un-chili

This rich, savory chili textured dish has no chili powder or cumin but does contain white chili (kidney) beans. It is quick and easy to make with most ingredients already in your kitchen. Add corn bread and a salad and you have a filling meal. Tastes great when made ahead, right out of the pot or as a leftover. It is a hit at potlucks too.

White Bean Turkey Un-chili

  • Servings: 1 ½ cups
  • Yield: 6 servings
  • Prep Time: 40 min
  • Cooking Time: 15 min

Ingredients

  • 2 Lbs. Ground turkey
  • 2 Tbs. turkey or chicken base
  • 1 Small red onion chopped
  • 2 stalks celery chopped Set leafy portion aside
  • 3 cloves fresh garlic diced
  • 1 bunch green onions, tops & bottoms chopped. Set ¼ Cup aside
  • 1 12-oz can dark beer
  • 1 can each, cream of chicken & fiesta cheese soup (do not dilute)
  • 1 15.5 oz can undrained white chili beans (Cannellini beans)
  • 1 10 oz can Rotel fire roasted tomatoes with chilies
  • 1 4oz. can fire roasted green chilies
  • 1 cup shredded Colby jack cheese

Preparation

  1. Brown turkey in a Dutch oven and stir in turkey base
  2. Remove turkey from pan with slotted spoon and set aside leaving drippings in pan.
  3. Sauté red onion, celery and garlic in drippings in Dutch oven. Add olive oil if needed.
  4. Add beer and stir to deglaze pot
  5. Stir in soups, then beans, then tomatoes, then green chilies, then browned turkey
  6. Stir in green onions
  7. Bring to a boil, reduce heat, cover and simmer 15 minutes
  8. Place in serving bowls and lightly stir in shredded cheese
  9. Serve garnished with chopped green onion and leafy celery stalk tops (corn chips, Doritos, cilantro etc. optional additions)
