"Smokey" Jalapeno Poppers

The family and friend all-time favorite tailgate recipe that was recently featured on Knoxville's Fox 43 Morning Show! Read my blog post on the history of this recipe at http://reciperealities.net/2015/10/19/smokey-jalapeno-poppers-will-be-featured-on-fox-43-tomorrow-morning/

"Smokey" Jalapeno Poppers

  • Yield: 36 poppers
  • Prep Time: 30 min
  • Cooking Time: 45 min

Ingredients

  • 18 jalapeño peppers, cut in half and seeded
  • Onion & Chive flavored cream cheese, 8 oz
  • 18 cocktail sausages, cut in half lengthwise
  • 1 pckg bacon, cut into 3rds
  • Brown sugar, ½ cup
  • 36 toothpicks

Preparation

  1. Preheat oven to 350 degrees
  2. Sauté cocktail sausages until lightly browned
  3. Smear cream cheese into one of the jalapenos
  4. Place a halved cocktail sausage on top
  5. Wrap with a ⅓ piece of bacon
  6. Secure with toothpicks and place on a large baking sheet
  7. Repeat with remaining ingredients
  8. Sprinkle on brown sugar (this helps carmelize bacon)
  9. Bake for 45 minutes, turning over halfway
  10. Hint: for best results and extra crispness, I either use a wire rack in my baking sheet
  11. Or I place them on a different baking sheet when I turn them over.
