Chunky Peanut Butter Cookies

We have all loved peanut butter since childhood. What would our school lunches be without a creamy or chunky PB&J sandwich or a chunky peanut butter cookie. I'm sure you will agree that peanut butter is the greatest food on earth and chocolates best friend. Please enjoy my quick and simple peanut butter cookies. They are a guaranteed family favorite.

Peanut Butter Cookies

  • Servings: 1
  • Yield: About 16 cookies
  • Prep Time: 20 min
  • Cooking Time: 10 min


  • 2 ½ cups Gold Medal flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 ½ cups Planters salted peanuts
  • 2 sticks unsalted butter
  • 1 cup light brown sugar packed
  • 1 cup sugar
  • 2 cups creamy Skippy peanut butter
  • 2 large eggs room temperature
  • 2 teaspoons pure vanilla extract


  1. Prehat oven to 350 degrees
  2. Mix flour, baking powder, baking soda and salt in large bowl
  3. Chop peanuts in a processor
  4. Beat butters and sugars for 2 minutes
  5. Fold in peanut butter, eggs and vanilla
  6. Fold in the dry ingredients
  7. Fold in the chopped peanuts.
  8. Use an ice cream scoop to drop cookies on a parchment paper lined cookie sheet.
  9. Use a fork dusted with flour to press down on the cookies to make a crisscross
  10. Bake 10 to 12 minutes

How-To Tips:

1. When you remove the cookies, peel the parchment paper away from the cookie. Do not peel cookie from paper. You're welcome.

2. Dust warm cookies with powder sugar.

3. Light colored pans are best. Happy results!

4. Cook on lowest rack.

5. Preheat oven for 1/2 hour. Your oven may say 350 degrees, but, not all areas of the oven have reached this temperature. This makes for perfect cookies.

6. Make sure cookies are not too close to one another.

7. For the love of cookies, make double batches. Yum!

Kids Corner:

Objective: To get kids cooking.

Teach kids to cook when they are young. You can make wonderful dishes that are quick and easy. Here is a recipe for you that I created when my kids were babies. This delicious peanut butter recipe is perfect for your little kids hands. They can get messy and it teaches kids how to focus and follow directions. You won't need the oven and the kids will love the flavor. It's a sure fire way to get kids cooking.

1 cup honey
1 cup creamy peanut butter
2 cups dry milk
Measuring cup
Mixing bowl
Wax paper
1. Kids take turns measuring ingredients and mixing them in a bowl. They can use their little hands to squish it together.
2. Then, they roll the dough into balls and set on wax paper for one hour.
3. The kids eat their yummies and talk about what they made.
Recommendation: Provide ingredients for each child to have their own. It's worth it.
