Paleo Maple Cinnamon Sweet Potato Breakfast Bake

Ingredients

  • 2 large sweet potatoes, grated
  • ⅓ cup pure maple syrup
  • 1 ripe banana
  • ½ cup raisins
  • ¼ cup coconut flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • pecans to garnish

Preparation

  1. Preheat oven to 350 degrees
  2. In a large bowl, add the grated sweet potatoes, maple syrup, eggs, banana, and raisins. Mix well Next, add the coconut flour, cinnamon, and salt. Mix well to combine
  3. Pour the mixture in an 8x8 greased baking dish
  4. Bake for 60 minutes
  5. Add pecans to garnish if desired
