I have two certifiable cookie monsters in my house who make daily demands for sweet treats. Coming off of a sugar-fueled holiday season, I took to the kitchen to develop a healthy cookie that they would love. I wanted to get a little extra nutrition into my two little sugar junkies without making them go cold-turkey on the sweet stuff. I was inspired by Almond Joy for these no-bake, protein packed bites. They're sweetened by pure maple syrup and the natural sugars in coconut. The powerhouse punch of nutrition in them comes from quinoa, oats and chia seeds.

My junior sous chef and I switched on the camera to share the recipe and to show you just how much we like these cookies.
