Grandma's Cranberry Sugar Cookies

My grandma made these cookies year after year. She made them with raisins, but I swapped in sweetened dried cranberries. These are SO soft and delicious, but simple and not overly sweet. I even eat them for breakfast. :)

Grandma's Cranberry Sugar Cookies

Ingredients

  • 10 oz sweetened dried cranberries
  • 1 ½ cup sugar
  • 1 cup Crisco
  • 2 eggs
  • 3 ½ cup flour
  • 1 tsp baking soda
  • 1 tsp vanilla

Preparation

  1. Preheat oven to 350.
  2. Combine cranberries and 1 cup of water in a saucepan; bring to boil. Reduce to a simmer and cook until liquid has been absorbed. Remove from heat and let cool.
  3. Combine flour and baking soda in a bowl.
  4. In a separate bowl, combine sugar, Crisco, eggs, and vanilla. Mix until smooth.
  5. Add cranberries and flour mix alternately to sugar mixture.
  6. Mix well.
  7. Shape into small balls (approx 1.5 inches big) and roll in sugar until evenly coated.
  8. Bake 10-15 minutes until edges are slightly browned.
