Coconut French Toast

Breakfast is the best meal of the day. This simple and unique French toast recipe lives up to its full potential.

Made with smooth and sweet coconut milk. The ground coriander stands out with a beautiful nutty aroma.

The sweet and savory cinnamon is irresistible. I created this quick and easy recipe by accident one morning using ingredients on hand.

I was delighted with the results. It is the only French toast recipe you will ever need.

French Toast

  • Servings: 1 Slice
  • Yield: 8 Slices
  • Prep Time: 10 min
  • Cooking Time: 8 min


  • Large cast-iron pan
  • 1 Tabelspoon olive oil and butter for frying
  • 1 large round loaf of home-style bread
  • 2 cups coconut milk - Room temperature
  • 3 eggs beaten - Room temperature
  • 1 Tablespoon vanilla extract
  • 2 cups powdered sugar
  • 2 Tablespoons cinnamon
  • 1 teaspoon ground coriander
  • ½ teaspoon kosher salt


  1. Preheat pan to medium high for 15 minutes
  2. Slice bread into 1" slices
  3. Mix coconut milk, eggs and vanilla
  4. Fold in powder sugar, cinnamon, coriander and salt
  5. Coat bread in mixture and then place into hot pan with olive oil and butter
  6. Keep space between each slice.
  7. Cook toast on each side until golden. The powder sugar makes the edges of the bread caramelized.
  8. Remove and dust with powdered sugar. Serve with Mama G's home made blueberry syrup.

1. Powder sugar is used because it dissolves. And, it makes the edges caramelize. Regular sugar does not dissolve.

2. All the ingredients are room temperature. Don't put cold ingredients into a hot pan. This changes the temperature of the pan. Your French toast will not sear properly. You want a soft middle and crispy outside.

3. Mix the white part of the egg (albumin) all the way into the yolk. If it is not mixed the batter will separate. You will have white parts of egg attached to the French toast. It will not taste good and it will burn. It will also cause large pieces of egg to hang off the side of the bread. Not a pretty site.

4. I use my hand mixer for about 5 seconds to beat the eggs. Air getting into the eggs in this recipe is OK. Not mixing the whites with the yolk will ruin your batter.

5. Coconut milk is used because it taste divine. Coriander has a roasted nutty flavor. And, it is full of citrus and sweet.
