This an ancient Persian recipe fit for a king. It has very healthy ingredients that appeals to most difficult pallet.

Fesenjoon

  • Servings: Enough to serve 4 people
  • Prep Time: 1 hr
  • Cooking Time: 1 hr

Ingredients

  • One whole chicken cut up, one pound of walnuts, pomegranate juice and paste, apple sauce,onions chopped,Persian saffron,basmati rice,butter, olive oil

Preparation

  1. Fry the cut up chicken lightly in a pan together with the onions and place in a pot, chop the walnuts in a blender and add to the pot,add the pomegranate juice and paste to the pot, add the chicken broth enough to cover the ingredients, let it cook over and open flame until chicken is fully cooked
  2. Wash the rice and place in a pot, add enough water to cover the rice when spread flat, add the butter, olive oil and salt, when all the water has evaporated lower the heat and cover and let the rice cook with the steam
