This brunch is anything but boring... and when you remove the alcohol, it's paleo and Whole30 compliant! Woo!

Colorful Potato Hash + Peach Bellinis

  • Yield: 2-3 servings
  • Prep Time: 10 min
  • Cooking Time: 30 min


  • ½ large onion
  • 2 red potatoes
  • 1 sweet potato
  • ½ purple potato
  • 2 garlic cloves
  • salt and pepper
  • ½ tbsp thyme
  • 2 tbsp olive oil
  • 6 pieces of bacon
  • 2-4 eggs


  1. Preheat the oven to 425 degrees.
  2. Chop your onion and potatoes into bite-sized pieces. Mince the garlic.
