Easy, light and delicious salad w a Mexican twist! Ole!

Avocado Corn and Bacon Salad w lime vinaigrette

  • Yield: 6 servings

Ingredients

  • Corn-4 ears
  • Kosher salt
  • Veg oil
  • Bacon-6 strips
  • Red bell pepper-1 large finely chopped
  • Avocado peeled and large diced
  • Cilantro chopped 4T
  • Cotija cheese ½ cup
  • Grape tomato sliced in half 6oz
  • Lime juice-2limes
  • Avocado oil ¼ cup
  • Butter lettuce cleaned leaves separated- 1 head
  • Baby romaine lettuce 3-4 heads

Preparation

  1. Grill corn with a bit of veg oil, salt and cumin. Cool and remove from husk.(can be done a day or so ahead)
  2. Sauté bacon until crisp. Chop or crumble bacon when cool.
  3. In a large bowl, combine corn, red bell pepper, avocado, cilantro, grape tomatoes and cotija.
  4. In a small bowl wisk lime juice, avocado oil and kosher salt. Toss corn mix with lime vinaigrette.
  5. Toss butter and romaine lettuce w corn mixture and place in a large bowl or platter. Top w bacon and serve.
