A simple healthy morning recipe
Philly Omelette and bacon

Ingredients
- 2 eggs
- 1 Vidalia Onion, rough chopped
- 1 green pepper, rough chopped
- ¼ cup Shredded Swiss
- 2 uncured bacon
- Olive Oil
Preparation
- Place 2 strips of bacon on paper towel. Microwave 2 min 15 sec
- Drizzle olive oil to coat medium pan
- Saute onion until lightly carmelized on medium low
- Add green peppers. Cook until softened
- Meanwhile, break eggs into small bowl. Add cheese. mix until combined
- Add green pepper/ onion mix to eggs and cheese
- Return to pan and cook until eggs are cooked. Folding when eggs are solid around edge
- Season omelette with sea salt and pepper, if desired.
