Mango Chia Seed Pudding

The healthiest pudding you could possibly eat. Coconut and almond milk make this dairy free, and mango with spices makes the flavor so tropical. Chia seeds are loaded with protein and antioxidants.

Mango Chia Seed Pudding

  • Yield: 6-8 servings
  • Prep Time: 5 min
  • Cooking Time: 5 min

Ingredients

  • 1 mango, peeled and chopped
  • 1.5 cup coconut milk
  • ½ cup almond milk
  • 2 tablespoons honey
  • 1.5 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground cloves
  • 3 tablespoons chia seeds

Preparation

  1. mix everything in the blender
  2. refrigerate at least 2 hours, ideally overnight.

Recipe Tags

Blend the first 8 ingredients on high speed until well incorporated. Transfer mixture to a bowl and thoroughly mix in the chia seeds, refrigerate overnight. Pudding will keep for 5-6 days.
