Homemade Pancake Mix

My kids wouldn't eat cereal instead of buying waffles and pancakes I came up with my own batter that I just have to add eggs and milk to (or in a pinch water will do fine). Also, I make them into mini muffins to put in the lunch box.

Homemade Pancake Mix

Ingredients

  • 4 cups all purpose flour
  • 2 cups cake flour
  • 1 tablespoon baking powder
  • 2 tsp. baking soda
  • 2 ½ tablespoons sugar
  • 1 ½ teaspoons salt

Preparation

  1. Sift all the ingredients together and store in an air tight container
  2. When ready to make the pancakes add two eggs, 1 tablespoon vanilla, and 1 cup milk
  3. Cook on a hot griddle. Flip once after bubbles form
  4. Stir in your favorite ingredients to add variety, i.e. chocolate chips, cinnamon, sprinkles
  5. If I have some leftover I will fill a mini muffin tin ½ full with the batter and bake at 350 degrees F
  6. If you make muffins you will want to definitely add some sugar, brown sugar, and/or maple syrup
  7. I often was out milk and eggs so I know that this recipe works by substituting water ;)
