Chia seeds are a new ingredient to some of us, but as the old saying goes, "Don't knock it 'til you try it"? Remember the first time you tried sushi? Chia seeds are versatile and healthy and are considered to be a "superfood." They soak up liquid and increase in size to make a creamy pudding. It's easy to change the flavors and add different fruit for variety.

Cinnamon Blueberry Chia Pudding

  • Servings: ½ cup
  • Yield: 2
  • Prep Time: 10 min
  • Cooking Time: 3 hr

Ingredients

  • 1 cup coconut milk
  • 3 Tbsp chia seeds
  • 1 tsp Stevia
  • 1 tsp vanilla
  • ½ tsp cinnamon
  • 1 cup blueberries
  • 1 Tbsp shredded coconut

Preparation

  1. In a mixing bowl, mix coconut milk, vanilla and Stevia until well combined.
  2. Prepare two small jars. Put 1 ½ Tbsp of the chia seeds in each jar.
  3. Pour half of the coconut milk over the chia seeds in each jar; whisk well.
  4. Tighten the top and refrigerate for at least 3 hours up to overnight.
  5. Remove lid, top with cinnamon and blueberries. Enjoy!
