Cindy's Crustless Sweet Potatoe Quiche

This quiche becomes everyone's favorite dish once they try it! It is both healthy and good. The crust is actually sliced sweet potatoes, the quiche is a mixture of vegetables, eggs and cheese. I would be thrilled to share this recipe with my fellow today fans!

Cindy's Crustless Sweet Potatoe Quiche

Ingredients

  • 2 Sweet Potatoes
  • ½ Yellow Onion
  • 1 bag of baby Spinach (can add other vegi's)
  • 1cup kale
  • Eggs
  • ¼ cup milk ( Almond or other)
  • Goat Cheese
  • Cheddar Cheese
  • ¼-½ tsp Red pepper
  • ½ tsp black pepper & dash sea salt
  • 2 tsp Olive Oil
  • 3 garlic cloves -chopped

Preparation

  1. Preheat oven 375
  2. Peel then slice very thing circle slices of sweet potatoes
  3. Toss sweet potatoe slices in olive oil & salt and pepper
  4. Spray pie tin with cooking oil
  5. Line sweet potatoes in pie tin, cover walls and any holes layer on top of each other, cut in half when needed
  6. Bake 20 minutes
  7. Sauté onion, then add garlic and top with spinach and kale, cook until wilted
  8. Take out sweet potatoes, top with onion and spinach/kale
  9. Mix together 7 large eggs, milk and red pepper
  10. Pour egg mixture over spinach
  11. Bake 25 minutes then top with mixture of crumbled goat cheese and cheddar
  12. Bake another 15 minutes until lightly browned and firm
  13. Let cool before serving, this is good cold and hot and can be made a day ahead
  14. If eating during Kathie Lee and Hoda this can be served with an adult beverage
