Sofrito - Carribean Seasoning and Marinade

Almost every dish in a carribean household starts with the use of Sofrito. It is a natural seasoning blended from fresh vegetables and spices. It is almost a living piece of your family history as there are many different variations (red, green, orange) This is a version of my family recipe passed down from my Grandmother and mother. I have kicked up the healing and nutritional benefits a notch by adding fresh turmeric, a powerful antinflamatory. I hope you will try my families sofrito recipe and enjoy being transported to warm carribean flavors right from your plate. Sofrito is great to marinade proteins, use in addition to your mirepoix, or any vegetables and spices you sweat in the pan to create a lot of added healthy flavor!

Sofrito - Carribean Seasoning and Marinade

Ingredients

  • 2 heads of garlic
  • ¼ Cup of Olive Oil
  • 2 tbsp. Apple Cider Vinegar
  • 2 Bitter Oranges (Optional)
  • 1 bunch of Cilantro
  • 1 bunch of Recao or Culantro (OPTIONAL)
  • 2 onions
  • 2 red peppers
  • 1 Cubanelle Pepper (OPTIONAL)
  • 4 tbsp. Dried Oregano
  • 2 nubs fresh turmeric OR 4 tbsp dried turmeric
  • 1-teaspoon sea salt

Preparation

  1. Rough Chop your ingredients
  2. Use a food processor or Blender to blend.
  3. Store in a glass mason jar or Tupperware (Use within one week fresh or store in freezer and thaw until ready to use for up to 1 year)
  4. 4.Additional Storing option – use an ice cube tray and fill with your Sofrito. Each time you cook you have an individual portioned green flavor bomb ready to use!
