It's asparagus season in Michigan right now. I live in Oceana County and we are home to the "National Asparagus Festival" which is the longest running asparagus festival in the nation. We are also known as the "Asparagus Capital of the Nation". In Oceana County, we produce two-thirds of all asparagus in Michigan because we are on the shores of Lake Michigan. The sandy soil is perfect for growing asparagus. We produce over 20 million pounds of asparagus each season in Michigan and we are second in the nation for asparagus production (California is first). Asparagus is not only delicious, but it's also extremely nutritious. It's high in folic acid and it's also a "Clean Fifteen" food. We are the only state that hand picks our asparagus. Purple and Green Roasted Asparagus

Ingredients

  • 1 pound fresh asparagus
  • 1 tablespoon avocado oil
  • 1 teaspoon lemon pepper seasoning
  • 1 teaspoon minced garlic
  • 1 teaspoon sea salt
  • Juice of 1 lemon

Preparation

  1. Add asparagus to a baking sheet along with the oil and seasonings. Thoroughly combine the seasonings and bake at 375 degrees F for 8-12 minutes, depending on the thickness of the spears. Drizzle on some fresh lemon juice and serve.

If you have your grill ready, grill the asparagus spears over medium heat instead of roasting the spears. YUM!
