A slightly less sweet, protein-packed update of a Monte Cristo & allergy-friendly, of course ~

Monte Mini

  • Servings: varies
  • Prep Time: 7 hr
  • Cooking Time: 10 hr

Ingredients

  • Ians French toast sticks (defrosted and cut in half)
  • Your choice of hummus
  • Swiss cheese, cut into bite-sized squares (can use dairy free, such as Daiya)
  • Ham, cut into bite-sized squares
  • Avocado, sliced
  • Sunflower oil (I used Winona Pure)
  • Confectioners’ sugar

Preparation

  1. Defrost the French toast sticks in the refrigerator the night before.
  2. Preheat the oven to 350°.
  3. Line a baking sheet with aluminum foil and lightly coat with oil.
  4. Spread some hummus on one side of each French toast stick.
  5. Assemble the sandwiches in layers as follows: French toast stick (hummus side up), Swiss cheese, ham, avocado, Swiss cheese, French toast stick (hummus side down)
  6. skewer with a toothpick
  7. Lightly spray with a bit of oil
  8. bake until lightly crispy
  9. Dust with Confectioners’ sugar
