Momma's Meatballs and Meat Sauce

On any big event or gathering, you’re always going to find me in the kitchen. It’s my “home” inside my home. When preparing food for a crowd, you can bet that I will include dishes that are tried and true; the dishes I know people love. Everyone who enjoys cooking is always looking for recipes that will make them instant rock stars in the kitchen, which brings me to my two personal favorites. One is my Momma’s amazing meatballs. The second is her homemade meat sauce. Our family has enjoyed these two recipes for decades. Long sub rolls loaded up with homemade meatballs smothered in sauce. Make up big batches. Freeze some for later to enjoy another night.

Momma's Meatballs and Meat Sauce

Ingredients

  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • ¼ cup olive oil
  • 1 pound ground pork
  • 1 pound ground beef
  • 1 ½ cup bread crumbs
  • 1 cup finely grated fresh Romano or Parmesan cheese
  • 3 eggs
  • ¼ cup chicken broth or warm water
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon kosher salt
  • 1 teaspoon coarse ground pepper

Preparation

  1. Sauté onion and garlic in olive oil until translucent.
  2. Set aside to cool.
  3. Combine pork, beef, breadcrumbs, cheese, eggs, broth or water, parsley, salt and pepper in a large bowl.
  4. Mix just until ingredients are combined.
  5. Roll into small balls (about an inch and a half.)
  6. On a baking sheet slightly greased or lined with parchment paper, bake meatballs at 375 degrees for about 15 minutes or until meatballs are slightly browned. (Or brown meatballs in frying pan with a little oil until browned.)

My Momma’s Homemade Meat Sauce
Ingredients:
1 large onion, finely diced
3 or 4 cloves fresh garlic, minced
2 sticks of celery, finely diced
1 medium carrots, finely diced
2 tablespoons olive oil
1 pound of fresh ground beef
½ pound Italian sausage (sweet or hot)
2 cans (16 oz) organic tomato sauce
1 can (6 oz) organic tomato paste
½ cup red wine
3 bay leaves
2 tablespoons fresh basil, finely chopped
Salt and pepper to taste (add only at the end of the cooking process)

Directions:
In a large pan (or Dutch oven) over medium heat, sauté onion, garlic, celery and carrot in olive oil until tender and translucent. Add beef and sausage and cook until browned. Add tomato sauce, tomato paste, wine, bay leaves and basil. Simmer for about 45 minutes. Add salt and pepper to taste.

Tip: To store sauce in Tupperware or freezer container, spray first with non-stick cooking oil to avoid staining the container.
