Figgy Pear Flatbread

1.This flatbread is our favorite appetizer when the "Network" girls in our family all get together. It's our go-to app and we always make several as they go fast! It’s easy to make using packaged whole wheat Lavash Bread for the base then layer it with fig butter, gorgonzola, sliced pears, sliced figs, and crumbled prosciutto. Just pop it in the oven or on the grill and in minutes you have a delicious appetizer that you top off with fresh arugula and parmesan then drizzle with a honey balsamic reduction. If you like wine then Pair this flatbread with a Cabernet Sauvignon which will bring out the flavors of the cheese and compliment the saltiness of the prosciutto!

Figgy Pear Flatbread

Ingredients

  • Flatbread (I like Josephs Brand Lavash Bread)
  • 3 T. Fig Butter (I use Trader Joes)
  • 2 T Olive Oil
  • 4 oz Gorganzola Cheese
  • 3 oz Parmesan Cheese (shaved)
  • 1 ripe pear
  • 6 ripe figs (or if out of season Trader Joes has frozen figs!)
  • ½ T Honey
  • ¾ c balsamic vinegar
  • 4 pieces of thin sliced prosciutto
  • 2 green onions
  • 2 c. Arugula

Preparation

  1. Pre Heat oven to 400 degrees
  2. Brown prosciutto until crispy
  3. brush olive oil on both sides of flatbread and bake on baking sheet covered with parchment paper 4-5 minutes (turning once half way)
  4. Measure balsamic and boil in saucepan, stirring until it has reduced to about ¼ c. then stir in honey and bring to boil. Set aside to cool. (or you can buy premade Balsamic glaze)
  5. Remove flatbread from oven and spread fig butter in a very thin layer
  6. Layer the following ingredients in this order:
  7. Crumbled gorgonzola cheese
  8. Thinly sliced green onions
  9. Chopped figs
  10. crumbled prosciutto
  11. Quarter the pear and slice the quarters very thinly and place evenly over flatbread
  12. Bake on lower rack in oven aprroximately 5-7 minutes until cheese has melted and flatbread is crispy brown
  13. Take out of oven and top with arugula, sprinkle shaved parmesan cheese
  14. Top the flatbread wtih the balsamic and honey reduction (I use a small squirt bottle to apply)
