Succulent Duck breast, seasoned and blackened topped with Tangy Apple Slaw

Duck Tacos

  • Cooking Time: 15 hr

Ingredients

  • Duck breast ( Maple Farms)
  • Blackening Seasoning (recipe will follow)
  • Coconut oil
  • 1 Granny smith Apple
  • 1 bunch Cilnatro
  • 2 radish
  • 2 stalk scallions
  • 1 sweet potato
  • 1 lime
  • 1 splash apple cider vinegar
  • 1 tsp sugar
  • ¼ cup cotija cheese
  • 4 corn tortillas
  • Salt and pepper to taste

Preparation

  1. Season duck breast with blackening spice and place in very hot skillet rubbed with coconut oil. Crisp on both sides until desired temperature is complete. Let duck rest and slice horizontal.
  2. Peel and cube sweet potato. Boil in salted water until soft. Drain and set aside for cooling to assemble taco.
  3. Juelienne Apple with skin on, season with lime juice and continue to add chopped cilantro, radish, scallions. Season with vinegar and sugar plus salt and pepper to taste.
  4. To assemble taco. Warm two tortillas and stack together, place warm sliced duck, cubed sweet potatoes, and top with apple slaw plus cotija cheese. Serve with Lime wedge on the side.

Blackening Spice

3 tbsp.. paprika

1 tbsp. cayenne

2 tbsp. kosher salt

1 tbsp. black pepper

1 tbsp.. Mexican oregano

2 tbsp. granulated garlic

1 tsp. ground thyme

1 tsp. coarse marjoram

1 tbsp. onion powder

Mix all ingredients together for blackening spice.
