Me and My Husband LOVE Mexican Food - When we moved to Utah from California the Mexican food just wasn't the same so we had to learn how to create our favorites at home like these Colorado Burritos

Colorado Burritos

Ingredients

  • 2 pounds thin cut beef
  • 1 tbsp ground pepper
  • 1 tbsp garlic powder
  • 1 tbsp cumin
  • 1 tbsp cayenne pepper
  • 1 tbsp onion powder
  • 1 tbsp chili powder
  • ¼ cup enchilada sauce
  • 1 bottle Trader Joes Chili Pepper Sauce

Preparation

  1. Place All Ingredients but Trader Joes Sauce in a Slow Cook and cook on low for 8 hours or untill meat easily shreads
  2. Drain Stock/juice (reserve ½ cup) and Shread Meat
  3. Place Meat back in Slow Cooker and add ½ bottle of Trader Joes Sauce and reserved stock
  4. Cook on warm for 30 minutes or untill ready to serve
  5. Add Meat to a Tortilla with your favorite Burrito Fillings (ex: Rice and Cheese) and top with a bit more Chili Pepper Sauce
  6. Enjoy!

Recipe Tags

-It seems like alot of seasoning but the flavor in the end is worth it

-Make a smothered burrito by topping your rolled burrito with extra enchilada sauce cheese and broil untill cheese is melted

-If you don't have a Trader Joe's nearby you can subsitute with extra enchilada sauce
