Slow Cooker Chicken Quinoa Soup

Short on time? Take 20 minutes to prepare this soup and let the slow cooker do the work for you! It's a healthy, protein-packed take on the traditional recipe.

Slow Cooker Chicken Quinoa Soup

Prep Time: 20 min Cooking Time: 4 hr

Ingredients

  • 2 chicken breasts
  • 2 tbsp olive oil
  • 2 cups quinoa
  • 3 full size carrots, chopped
  • 2 celery stalks, chopped
  • 1 yellow onion, diced
  • 2 tbsp fresh parsley
  • 64 oz. chicken broth
  • Pinch of dried thyme
  • Salt and pepper to taste
  • Additional parsley for garnish

Preparation

  1. Chop carrots, celery and onion and set aside.
  2. Heat slow cooker on high and place chicken on bottom, drizzling olive oil overtop.
  3. Throw carrots, celery and onions overtop, followed by quinoa, salt and pepper.
  4. Pour chicken broth overtop of everything.
  5. Cook on high for approximately 3.5 hours; remove chicken and shred into smaller, bite-size pieces and then return to slow cooker and add fresh parsley.
  6. Cook for an additional 30 minutes.
  7. Garnish with fresh parsley and enjoy!
