Minestrone Soup in 30 Minutes

The next time you’re craving a bowl of soup but don’t feel like leaving the house, check your pantry for an unopened jar of pasta sauce. If you have one you’re well on your way to making your own delicious pot of minestrone soup!

Minestrone Soup in 30 Minutes

Ingredients

  • 1 jar pasta sauce
  • 7 cups of water
  • ½ cup chopped carrots
  • ½ cup chopped celery
  • ½ cup diced onions
  • ½ can of kidney beans, drained
  • 1 ½ cups pasta, uncooked
  • 2 teaspoons oregano
  • 2 teaspoons basil
  • 1-2 kale leaves, ripped into pieces and discarding stems
  • Salt and pepper to taste
  • Fresh grated parmesan

Preparation

  1. Combine ingredients in large stock pot, bring to boil.
  2. Allow to boil and cook until vegetables are cooked
  3. Top with freshly grated parmesan, if desired
