Grilled Artichokes

A simple way to prepare artichokes on the grill with a two-ingredient dipping sauce.

Grilled Artichokes

Ingredients

  • 1 medium to large artichoke per two people
  • 2 lemons
  • 1 cup water
  • 1 Tbs salt
  • 1 Tbs olive oil
  • 1 cup sour cream
  • 3 Tbs dijon mustard

Preparation

  1. start by trimming off the tips of the leaves
  2. cut off the top, about ¼ from the end to remove remaining tops of the leaves
  3. rub all over, especially cut areas with lemon juice to prevent browning
  4. place in a pressure cooker or Instant Pot cut side down and add in water and salt and cook on high for 7 - 10 minutes, depending on the size of your artichokes
  5. once cooked, remove and cool for a few minutes
  6. cut down the center, starting at the stem to halve the artichoke
  7. remove the "choke" or the fuzzy part by running a knife along the base of the choke and scooping out with a teaspoon
  8. rub the cut sides with olive oil
  9. grill cut side down on a preheated grill and cook for 60 seconds or until your desired amount of char
  10. prepare dipping sauce by combining sour cream and dijon
