Copycat Starbucks Egg White Roasted Red Pepper Bites

  • Yield: 8 servings
  • Prep Time: 10 min
  • Cooking Time: 1 hr

Ingredients

  • 6 egg whites
  • ¼ cup cottage cheese
  • ¼ cup Monterey jack cheese
  • 1 tbsp. butter
  • ½ roasted red bell pepper, finely diced
  • 1 tsp. Rice Starch
  • ¼ cup spinach, finely diced
  • 2 tbsp. green onions, finely diced (about one medium green onion)

Preparation

  1. Set your sous vide machine to 172F.
  2. Grease the sides of the mason jar with a touch of your favorite oil, or use cooking spray.
  3. In a separate bowl, whisk the egg whites.
  4. Fold in the Cottage cheese, Monterrey jack cheese, red pepper, rice starch, spinach and green onions.
  5. Add the hot sauce and butter.
  6. Mix until well combined.
  7. Divide the egg mixture evenly among all the jars.
  8. Seal the jars with the lids.
  9. Place the jars in your sous vide machine.
  10. Cook for 1 hour.
  11. Serve immediately.
